The four‑course Italian menu created exclusively for this event by Chef Howell, an award‑winning chef who has led kitchens across the USA, Canada and The Bahamas.
RECEPTION – Paired with Prosecco
Focaccia di Bari (pomodorini, scamorza affumicata, basilico) • Bari-style focaccia with cherry tomatoes, smoked Scamorza cheese and fresh basil Crostini di Tapenade (olive nere) • Crostini with Black Olive spread
ANTIPASTO – Paired with Vermentino La Cala DOC
Insalata di radicchio, finocchio, salame, olive verdi, pecorino, pistacchio vinaigrette • Radicchio and fennel salad with julienne Genoa salame, green olives, pecorino cheese, pistachio vinaigrette
PRIMO – Paired with Primitivo di Manduria GT
Orecchiette con crema di fave e rapini • ‘Little ear’ pasta from Puglia with fava bean cream and broccoli rabe
SECONDO – Paired with Barolo Serralunga d’Alba DOCG
Polpette di agnello allo zafferano con salsa di cipolle caramellate e polenta • Saffron-infused lamb meatballs with caramelized onion demiglace served with polenta
