In this class, Chef Riccardo will guide you through preparing a selection of well-loved dishes that balance tradition, flavour, and simplicity.
You’ll start by learning to make a a classic Roman sauce for Spaghetti all’Amatriciana – made with tomatoes, pancetta (cured pork) and pecorino cheese, which known for its bold, savoury flavour served with prepared pasta.
Then you will learn how to make the Italian-Canadian fan favourite, Chicken Parmigiana and how to prepare it so it’s balanced, flavourful, and not overly heavy.
To finish you will learn how we prepare fresh fruit for a light, simple ending in the Italian style
